1kg Self raising flour
150g Unsalted Butter
300g Buttermilk
5 Medium Eggs 240g Eggs
35g Baking Powder
2g Salt
20g Caster sugar
200g Raisins or 150g Cave aged Jersey Cheddar
150g Cave aged Jersey Cheddar Or 200g Raisins

    Step 1 :

    Sift Flour and Salt and add to Sugar & Soft Butter
    Mix to a crumble texture

    Step 2 :

    Add Fruit / Cheese, Eggs, Buttermilk & Baking Powder
    Mix by hand until dough forms

    Step 3 :

    Roll out and cut

    Step 4 :

    Brush with egg yolk & leave to rest for 30 mins

    Step 5 :

    Bake at 170 Degrees centigrade for 20 mins
